Avocado Tomato Salad

Dress up that avocado!

Avocado Tomato Salad

A delicious combination of tomatoes and avocado. A great nutrient-dense snack.

Recipe

  • 1 large avocado
  • 1 medium tomato, sliced
  • 1 green onion, sliced
  • 2 tbsp balsamic vinegar
  • 1/2 tbsp olive oil
  • sea salt, freshly ground
  • black pepper, freshly ground
  • other seasonings, to taste (dried or fresh basil, garlic powder, etc)
  • shaved parmesan cheese (optional)
  • sliced fresh mozzarella (optional)

 

Arrange tomato slices on a plate & season lightly with salt. Halve the avocado, remove pit without slicing your thumb in half. Throw pit across the kitchen towards the trash can. Miss. Curse your rotten aim. Add sliced mozzarella on top of the tomatoes at this point, if dairy is your friend. If dairy is NOT your friend, please do not add circles of gastrointestinal distress to your salad. 

Slice avocado & arrange haphazardly (or neatly) on top of tomato. Sprinkle with green onion.

In small pan over medium heat, reduce the balsamic vinegar, bubbling, for a few minutes. Let cool. Pour in the olive oil and stir vigorously to combine. Drizzle over salad. 

Gently sprinkle other desired seasonings on top, with  optional shaved parmesan saved for last. 

Meow.

Eat it and stuff. Mmm. Feel good about yourself!
